Gaund ra Laadoo / Goond ke laddu / Sweet Wheat flour balls with Indian edible gum

This is a recipe which brings back happy winter memories. Since I now live in a coastal town, the rainy season is about as cold as it gets here. Nonetheless, the taste of home is priceless!


A number of varieties of laddoos (and other delicacies) were made at our house over the cold winter months which lasted from November till early February.


These gond laddoos were one of the staples. My mother and my aunt would make a large batch and store in a stainless steel containers. They were ready snacks for the kids in the house. I used to love them and trade them for breakfast many times. A glass of hot milk and 1 laddoo and my breakfast was done.

Gond is an ingredient which is used in traditional foods like laddoos and panjiri given to newly lactating mothers.


It is also considered to be heat producing and hence widely used in winters.




Ingredients
Whole wheat flour- 2 katori
Goond/ Gaund- 1/4 katori
Sugar (powdered)- 1 and 3/4 katori
Cardamom (Powdered)- 5
Kali mirch/ black pepper- 1tsp (you can use whole or crushed ones)
Dry fruits- 1/2 katori , a mix of almonds, pistachios and cashews
Saffron strands -1 pinch  (optional)
Ghee- 5 and 1/2 tbsp


Method
Melt the 1 tbsp ghee in a thick bottomed pan.
Add the gond crystals to the heated ghee. It will puff up into whitish balls.
Remove from pan and crush it with a rolling pin /belan
In the same pan, add the remaining ghee and let it melt.
Roast the whole wheat flour on a medium low flame. Stir it constantly till it roasts well. The house will be filled with a nice aroma to warm everyone's heart.
Add the gond and dry fruits to this mix. Remove from heat.
Let it cool enough for you to touch with hands. Now mix in the sugar, Cardamom, saffron and kaali mirch.
Mix it well and press it into the shape of lemon sized balls.
Makes about 18-20 small laddoos.


Note: If the mixture is too dry or crumbly, add some hot melted ghee spoon by spoon. Mix till u get it right.

Sandwich with basil pesto

 Most people I know are not into sandwiches..it sounds too simple! Its not French/Italian or ethnic Indian.
 Yet ...Here I am with another recipe of Sandwich. I can't help but experiment with the fillings.
Here I have tried a vegan basil pesto (Recipe by Soma) with whole wheat bread and results are pretty good.

    Ingredients (for 2 sandwiches)
  1. Brown bread/ wheat bread/ multigrain bread- 4 slices
  2. Cucumber- 1, thinly sliced
  3. Tomato- 1 big, thinly sliced
  4. Capsicum/green pepper- 1 small, thinly sliced
  5. Red Onion-1, thinly sliced
  6. Mushrooms- 3-4 small, thinly sliced and sautéed in oil/butter
  7. Salt-to taste (remember the pesto has salt)
  8. Freshly ground black Pepper-to taste
  9. Homemade basil pesto- 2-3 spoons (u can increase as per your taste)
  10.  Italian seasoning to sprinkle (optional)
  11. Mustard sauce and ketchup (optional)- to serve
  12. Cheese slices (we used 'Emborg' -edam cheese)- 2

Method
  • Toast the bread slices. You can also prepare the sandwich and then grill it.
  • Spread the pesto on the bread and layer all the veggies onion, cucumber,capsicum, tomatoes and mushrooms respectively.
  • Sprinkle salt, black pepper and the seasoning mix . Cover with cheese slice.
  • Cover with toasted bread.
  • Use a sharp knife and cut it into a triangle.
  • Enjoy with your coffee/tea.
If you want melted cheese then you can re-heat the sandwich on a skillet . Remember to keep it the cheese- y side down. I tried it with one, as it had went somewhat cold.

Coconut Cookies (eggless) / Nariyal ke biscuit

Sometimes you want nothing chocolate-y, sometimes you just want wholesome goodness, sometimes you need to have coconut cookies...
So I baked a batch of whole wheat coconut cookies, which turned out pretty neat.

The recipe is very simple and can be found at more places than one...I really cant remember where I jotted it from.

Ingredients

  1. Whole Wheat flour- 1 cup
  2. Softened butter - 100gm (1/2cup)
  3. Grated coconut- 1 cup + 1Tbsp for topping
  4. Icing sugar- 3/4 cup
  5. Baking powder-1tsp
  6. Coconut Extract- 1/2 tsp (optional)
  7. Milk- 1-2 Tbsp
 Method
  • Pre-heat the oven at 180 degrees centigrade.
  • Cream the sugar and butter. Add the extract.
  • Mix the baking powder with the flour thoroughly. 
  • Add the flour to the creamed sugar and butter. Mix well.
  • Add grated coconut and make soft dough. Add milk if the dough seems to be too dry.
  • Prepare the baking sheet by brushing it with a little butter.
  • Take extra grated coconut in a flat bowl.
  • Make small rounded balls, press them on the coconut flakes/grated coconut so some if them stick to it.
  • Place on the sheet leaving room for the cookies to expand.
  • Put the tray in the oven for 12-15 min. Keep your eyes on it. they should not burn.
  • When slightly browned at the edges and just about to set, take them out let it cool in the tray for a minute or so.
  • Remove and store in an air-tight container.
  • Bake the rest in a similar manner.

Laapsi (Sweet Bulger)


    This is a traditional Rajasthani sweet.  Whenever I have to serve something special and traditional, this one comes real handy. It's easy to make and is usually bang on target!
    In my home, it was usually made in the Diwali (Popularly known as, the festival of lights) "Annakoot" poojan (the traditional prayer with offerings during Diwali time). A lot of times it was a feast-feature when we had gathering of the whole family (yes, I happen to have a huge joint and extended family).
    This recipe is associated with old memories of childhood, where we just went running about the place and ate everything served on our plates (since we were at least 4 kids sharing a big plate).The kitchen would be crammed, because most women would be in there with aroma of goodies floating around.
    Those were the days…
    Recently my hubby got a taste for it! So he requested me to make it and I happily obliged. With a recipe that tasty & easy…who wouldn't?

    Ingredients
  1. Daliya (broken wheat, Bulger)-1/2 cup
  2. Jaggary/ gur-1/2 cup
  3. Clarified butter/Ghee- 1 Tbsp
  4. Green cardamom (crushed)- about 1-2 pinch, discard the shell
  5. Dry fruits- (optional)
  6. Water for cooking

    Method
  1. Heat ghee and soak jaggary in water
  2. Roast daliya in this ghee till its golden brown.
  3. Pour water and let it cook on medium flame for a 5-10 minutes
  4. Strain the jaggary soaked in water and collect the water. The remaining jaggary can be kept for further use.
  5. When the daliya is cooked add jaggary water to it
  6. Let is cook for a few min. The visible water should evaporate.
  7. Add the crushed cardamom. You can also add dry fruits (almonds, cashews, raisins etc.) to this mix.
  8. Serve hot.
